Holiday Salad
If you’re in need of a holiday dinner salad that is both flavorful and plates beautifully, this is a wonderful one. It’s very rich, holding its own alongside decadent mains like prime rib and lobster. Did I mention it’s very easy to assemble?
Dressing:
1/4-1/2 C lemon juice (to taste)
2-4 tsp honey (to taste)
1/2 C olive oil
2 tbsp minced shallots
4 tbsp Dijon mustard
Salad:
Leafy greens (hearty varieties are best with this dressing)
Avocado
Roquefort blue cheese (like Ina says, the good kind!)
Pomegranate arils
Crisped prosciutto, broken into bite-sized pieces (pop in the oven on a parchment lined baking sheet for 10 minutes, or until a bit browned and crispy, at 400)
